Homemade Family Beef, Bean & Vegetable Chilli Soup

TEN PLANTS IN ONE POT, AND THE KIDS STILL EAT IT!

How I build one chilli soup for the whole family without cooking dinner twice.


I used to think family dinners meant choosing. Either the kids eat it and I get something bland, or I cook what I actually want and negotiate with a six-year-old.

Then I started building the heat at the table instead of in the pot.

That one change fixed most of it.


WHY THIS SOUP EARNS A SPOT IN MY WEEK:

Count the plants: onion, garlic, leek, carrots, zucchini, two kinds of sweet potato, butter beans, lentils, tomatoes.


That is ten different plant foods in one bowl. Gut bacteria feed on that variety, and most of us fall well short of it in a normal week.


The lean beef and beans together push the protein up, which matters more in midlife than the diet industry ever told you. Muscle does not maintain itself after 40.


And it freezes. Eight servings from one pot means three future dinners already done.


WHAT GOES IN IT:

  • 1 red onion, diced

  • 2 cloves garlic, crushed

  • 1 leek, sliced

  • 2 carrots, diced

  • 1 courgette, diced

  • ½ purple kumara, diced

  • ½ orange kumara, diced

  • 500 g lean beef mince

  • 1 can butter beans, drained and rinsed

  • ½–1 can lentils, drained and rinsed

  • 2 cans crushed tomatoes

  • 1 small can tomato paste

  • 500 ml beef bone broth

  • Beef stock, to reach your preferred consistency

  • 1–2 tsp smoked paprika

  • 1 tsp dried oregano

  • Extra virgin olive oil, for cooking

  • Salt and pepper, to taste


HOW I BUILD IT:

  1. Warm a drizzle of olive oil in a large heavy-based pot over medium heat. Add the diced red onion, crushed garlic, sliced leek and diced carrots. Let them soften — do not rush this part.

  2. Stir in the smoked paprika and cook for about 30 seconds. This step smells like the whole meal.

  3. Add the lean beef mince and cook until browned, breaking it apart as you go.

  4. Add the diced courgette, purple kumara and orange kumara. I use both varieties mostly because the purple one makes the kids curious enough to try it.

  5. Stir in the butter beans, lentils, crushed tomatoes and tomato paste.

  6. Pour in the beef bone broth, then add beef stock until it looks like soup to you. Add the oregano, salt and pepper.

  7. Bring to a gentle simmer, cover and cook for 45–60 minutes until the kumara and vegetables are tender and the flavours have developed.

  8. Taste and adjust the seasoning. Add extra smoked paprika or oregano if needed.


Slow cooker option: Brown the mince and soften the base vegetables first, then transfer everything to the slow cooker and cook on low for 6 hours, or high for 3–4 hours.


THE PART THAT MATTERS MOST

The pot stays mild. No chilli powder in the base.


Then adults add jalapeños, chilli and extra spice to their own bowls.

Actually, one correction to that. Mild does not mean flavourless. The smoked paprika and bone broth carry the base, so the kids' version is a real meal, and yours just runs hotter.


Top with grated cheese for extra protein and calcium. Avocado, Greek yogurt or a slice of sourdough all work alongside it.


One more thing worth knowing. It tastes better the next day, so I always make it a day ahead when I can. Fridge for 3 to 4 days, freezer for 3 months.

Make one pot. Count the plants as they go in, and notice you did not have to cook a second dinner.
